The best thing about cooking at home is the left-overs. Usually, if you make a good recipe once, it tastes even better the second day. And, if it doesn’t, then you adjust and try again later.
While I did not get to eat my Bourbon Pork for lunch today, my wife did. She ate it just the same, but she said that the sweetness intensified over night–so much so that the thought of having dessert hurt her stomach.
I have a few guesses as to why.
- 1/4 cup of honey–there is simply too much sweetener.
- Maker’s Mark bourbon–I only have two bourbon’s here, and MM was the “lower” grade of the two. Problem is, MM is naturally a sweet bourbon, so it’s possible that sitting overnight just intensified the flavor.
- 4 pork chops–My recipe called for 4-6. However, there was enough glaze for at least 6 chops. Perhaps my wife just had too much glaze and not enough meat.
So, next time, we’ll use a more sour bourbon and definitely not as much sweetness.
She said it was still tasty–just really, really sweet.
